Widely eaten across Spain, Tortilla is a popular picnic dish made with many variations in different places. The basic ingredients of a Spanish tortilla are eggs and potatoes. People can choose to make it with or without onions.
Having traveled across several borders, our food blogger Amrita Vyas shares her version of desi tortillas, which are good to go as your tea-time snacks, cocktail party munchies or kitty party tummy fillers.
Here’s her recipe of Masala Spanish Tortilla. Have a look and try it out for yourself:
Step 1: Roughly chop 3 small sized potatoes and 1/2 medium sized white onion
Step 2: Take 4 tablespoons of cold pressed extra virgin olive oil in a flat pan and heat it for 2-3 minutes
Step 3: Add the chopped onions in the heated oil, cook it on low flame for 6-7 minutes till it caramelizes and add chopped potatoes
Step 4: Saute both for 10 minutes on medium flame till it caramelize together with a soft gold texture
Step 5: Take a medium sized bowl and beat 6 large eggs, add 1/2 teaspoon of each – salt, red chilly powder, garam masala and 1 chopped green chilly
Step 6: Add the caramelized onions and potatoes in this mixture and let it sit for 10 minutes
Step 7: Take the same flat pan and heat 1/2 tablespoon of olive oil in it for 2 minutes. Start pouring the mixture in the pan and cook it for 5 minutes on low medium flame.
Step 8: In order to cook it from other side, take a large plate and flip the tortilla on it. Now start sliding the tortilla back in the pan and cook the other side for 5-6 minutes
Step 9: Flip it again in a large plate, cut it into pieces and serve hot!
