If you are a vegetarian and your pallet is craving for a mouth-watering soup, but most recipes that you are looking at have a non vegetarian broth, then bother not, Food blogger Amrita Vyas returns this week with an appetizing French Onion Minis recipe this week with a twist for the vegetarian patrons.
You read it right! French Onion Minis, which are usually made with a beef broth can actually be prepared in a completely vegetarian style, says Vyas.
Here’s the recipe:
Step 1: Chop a medium sized red onion and lightly toast a slice of bread in a toaster or on a pan
Step 2: Heat 1 teaspoon of salted butter and 1 teaspoon of olive oil in a pan, put chopped onions, 2 sprigs of thyme, 1/2 teaspoon brown sugar, 1/2 teaspoon salt, 2 teaspoon of dry sherry and 1 teaspoon of soy sauce. Sauté everything together for 10 minutes till the onions caramelise
Step 3: Add 2 cups of water (24 Ounces) and boil it for 10-15 minutes until all the ingredients mix well
Step 4: Pour the prepared soup in small sized bowls or mugs and immerse a piece of toasted bread in each
Step 5: Top it with sliced gruyere cheese followed by grated parmesan and mozzarella. (A hint of ground pepper is optional)
Step 6: Bake it for 5 minutes at 350 degree Fahrenheit and broil it for 4 minutes for that crunchy top
Step 7: The french onion minis are ready!
